Profiterole (noun): [pruh-fit-uh-rohl] A savory pastry ball filled with sweet whipped cream and dusted with powdered sugar.



  • 1 cup boiling water
  • 1/4 teaspoon salt
  • 1/2 cup butter or margarine
  • 1 cup sifted flour
  • 4 eggs unbeaten


  • 1 cup heavy cream
  • 1 tablespoon sugar
  • 1/2 teaspoon vanilla extract



  • Preheat oven to 450 degrees
  • Combine the water, salt, and butter in a saucepan and bring to a boil.
  • Add the flour all at once and cook, stirring constantly until mixture leaves the sides of the saucepan clean.
  • Let the mixture cool.
  • Add the eggs one at a time, beating in each thoroughly.

  • Grease a baking sheet and form into balls, or blobs.
  • Bake for 15 minutes, then reduce heat to 35o degrees and bake for 20-25 minutes longer.
  • Let cool, then cut a small portion of the top off.
  • Fill with whipped cream, replace top, and dust with powdered sugar.


  • Put heavy cream, sugar, and vanilla extract into a bowl.
  • With an electric beater, beat the ingredients until smooth and whipped.
  • If the consistency is too runny, confectioners sugar can be added.
