Chocolate Hazelnut Cupcakes

Chocolate Hazelnut Cupcakes (noun): [chaw-kuh-lit hey-zuhl-nuht kuhp-keyks] A rich, chocolaty cupcake filled with a creamy chocolate ganache and topped with a sweet Nutella buttercream frosting and crushed Ferrero Rocher chocolates.

  • 1 stick unsalted butter
  • 2 ounces bittersweet chocolate chips
  • 1/2 cup cocoa powder
  • 3/4 cup flour
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 2 large eggs
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1/2 cup sour cream

  • 2 cups semi-sweet chocolate
  • 3/4 cup heavy cream

  • 1 to 2 sticks of unsalted butter
  • 1 13-ounce jar of Nutella
  • 1 tablespoon vanilla extract
  • 2-4 cups confectioners sugar
  • 4-6 tablespoons heavy cream

  • Preheat oven to 350 degrees.
  • Slice the butter into chunks and place in a bowl with the chocolate chips and cocoa powder.
  • Microwave about 1 minute or until it can be stirred smooth and set aside.
  • In a small bowl, combine flour, baking soda, and baking powder.
  • In a separate bowl, beat the eggs.
  • Add in sugar, vanilla, and salt and beat until fluffy.
  • Add the cooled chocolate mixture and the sour cream to the egg mixture and beat until combined.
  • Slowly add the flour mixture in, beating to combine.

  • Place in the oven and bake until an inserted knife comes out clean, about 15 minutes.
  • Once cooled, poke a hole in the middle of each cupcake.

  • Heat the cream in either the microwave or in a skillet until boiling.
  • Add chocolate chips and stir until combined and smooth.
  • Place in the refrigerator until consistency is pour-able but not too runny.
  • Fill the cupcakes by spooning the mixture into a frosting bag (or a ziplock bag with a corner cut off) and squeezing it into the already made holes.

  • Start by putting one and a half stick of butter and 3/4 of the 13-ounce container of Nutella in a bowl. Beat together until combined.
  • Add the vanilla extract and 3 tablespoons of heavy cream and beat together.
  • Slowly add in 2 cups confectioners sugar, beating to combine.
  • Keep adding confectioners sugar and heavy cream until the right consistency is formed.
  • More butter and Nutella can be added for flavor and consistency as well.
  • Ice the cupcakes!

  • Crush some Ferrero Rocher chocolate candies and add on top for an added touch.

  • Eat and enjoy!
